Memphis Style Coleslaw





This recipe was adapted from Our Best Bites. 


Our whole family, even my picky eater LOVED this recipe! 

Ingredients:
1 c. mayonnaise 
2 Tbsp. Dijon or whole-grain mustard
2 Tbsp. apple cider vinegar
2 Tbsp. sugar
1/2 heaping tsp. Kosher salt (or 1/2 tsp. of table salt)
1 Tbsp. grated onion
2-2 1/2 tsp. celery seed (I made this with out and it was still very good)
1 16-oz. bag shredded cabbage with carrots or 1 head of cabbage shredded
1/2 minced green bell pepper
1 carrot, peeled and grated



Directions:
In a bowl combine, mayonnaise, mustard, vinegar, sugar, salt, onion and celery seed. Mix.
Then add cabbage, green pepper and carrot to mayo mixture. Mix again. 
Chill in refrigerator for at least 2-3 hours.

Baked Sweet Potato Fries





I am addicted to these! So easy and so yummy!


Ingredients:
sweet potatoes, 5 peeled and sliced
olive oil
chili powder
garlic salt
pepper


Directions:
Preheat the oven to 425. Add sweet potatoes to a bowl and drizzle with olive oil. Sprinkle chili powder, garlic salt and pepper. Stir. You may need to add seasoning again. I did. :) 
Pour fries onto a cookie sheet and bake for 15 minutes. Turn the fries overs and bake for another 15. Taste. You may need to add salt. Up to you!

Crockpot Italian Chicken

Sorry no pic but this was so great! We had this last night and the whole family loved it. This would be a great meal to take to new moms. 


Ingredients:
4 chicken breasts
2 cans of cream of chicken
1 cup milk
1 packet Italian dressing mix
1-8oz cream cheese
Rotini Pasta


Directions:
Spray crockpot with cooking spray. Place chicken in crock pot. 
Mix cream of chicken, milk, Italian dressing packet and pour over chicken.
Cook on low for 6-8 hours. 
Shred chicken and place cream cheese in crock pot and allow to melt. Stir. The cream cheese makes it so yummy!!!!
Boil your rotini pasta according to package instructions.
Serve chicken mixture over pasta. 
We served this with Italian bread and strawberry feta salad. Yum!

Easy Strawberry Pie



This was SO GOOD and super easy to make. I am not a strawberry pie fan but this was great! 
Ingredients
  • 1 C sugar
  • 1 C Water
  • 3 T strawberry gelatin mix
  • 1 Pint Fresh Strawberries
  • 3 Tablespoons Cornstarch
  • 1 pie crust, cooked and cooled 
Instructions
  1. Mix  sugar, cornstarch, and dry gelatin in a bowl. 
  2. Add water and stir.
  3. Place mixture in a pot and cook until thick and clear over medium high heat. You have to stir constantly to prevent burning. 
  4. Set aside and let cool. 
  5. While mixture is cooling, wash and cut strawberries in half. Place strawberries in pie crust.
  6.  Once the filling has cooled, pour over strawberries and chill pie until ready to serve. Serve with cool whip or vanilla ice cream.

Saucy Crock Pot Chicken Thighs (Aimee)

"Jenn this recipe is awesome! We used thighs and drumsticks and took off the skin first. I would omit the hot sauce and we used trader joes bbq, which is yummy. Kids loved it. We had with mushroom and herb risotto." - Aimee

Ingredients
8 (5-6 ounce) chicken thighs 
1/2 (teaspoon) salt 
1/4 (teaspoon) black pepper 
1 1/2 (cup) barbecue sauce 
1/2 (cup) honey 
2 (teaspoon) prepared mustard 
2 (teaspoon) Worcestershire sauce 
1/8 (teaspoon) hot pepper sauce 
          Directions: 
1. Sprinkle chicken with salt and pepper. Place on a broiler pan. Broil 4-5 inches from the heat source for 6-8 minutes on each side or until juices run clear. Transfer to a 5-quart slow cooker.

2. In a small bowl, combine the barbecue sauce, honey, mustard, Worcestershire sauce and hot pepper sauce. Pour over chicken; stir to coat. Cover and cook on low for 4-5 hours or until heated through. Serve.

3. Note: You may leave out the hot pepper sauce for a less spicy version.

Parmesan Tilapia



  • This tilapia is full of flavor! We loved it and definitely will make again. It is so easy to make too.
  • This recipe was adapted from food.com
  • Ingredients:
  • lbs tilapia fillets 
  • juice of half lemon
  • grated parmesan cheese, 1/2 cup
  • tablespoons butter, room temperature
  • mayonnaise, 3 Tbsp
  • onion, 3 Tbsp chopped
  • Old Bay Seasoning, 1/4 tsp
  • dried basil, 1/4 tsp.
  • black pepper to taste
  • dash hot pepper sauce

Directions:

Preheat the oven to 350 degrees.

Grease a 9x13 pan with cooking spray. Add tilapia. Pour lemon juice over tilapia and bake for 15-20 minutes or until fish begins to flake. 

While cooking mix butter, mayo, onion, Old Bay, basil, pepper and hot sauce in a bowl. 

Once the fish is cooked spoon the cheese mixture over the fish and bake for another 5-10 minutes. Enjoy!

Olive Garden Pasta Alfredo


Made this last night and it was very good. However if you are wanting a low fat meal don't eat this!
This recipe was adapted from Budged Saavy Diva.

Ingredients:
Spaghetti or fettuccine noodles
butter, 1 stick
garlic, 2 cloves minced
heavy whipping cream, 1 pint
Parmesan cheese, 1 cup
cream cheese, 3-4 ounces
salt and pepper to taste
cooked broccoli florets, optional

Directions:
Cook pasta according to box instructions. 
In a sauce pan, melt butter. Once the butter is melted add the garlic. 
After a few minutes you can add the whipping cream and cream cheese. Cook until cream cheese is melted. Make sure you do not boil or it will burn. 
Add the Parmesan cheese. Stir until cheese is melted. Add salt and pepper to taste. 
Add the the broccoli.
Pour sauce over cooked noodles. Also you could sprinkle more Parmesan on top. Enjoy!!!!

Crispy Mexican Chicken Wraps


INGREDIENTS:
1 cup cooked rice (I used instant)
1 cup cooked, shredded chicken or 1 can of chicken, shredded
1 can black beans, rinsed and drained
1/4 cup red onion, chopped
1/2 red or green pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups colby jack cheese, shredded
6 whole wheat burritos

DIRECTIONS:

Cook rice according to package directions.
Add chili powder, cumin and garlic salt to the rice.  Add remaining ingredients except for cheese. Sprinkle about ¼ cup of cheese over tortillas, then add chicken and rice mixture down the center of the tortilla. Roll stuffed tortillas, leaving edges open. Spray a pan or skillet with cooking spray. I added olive oil too.
 Arrange 2 wraps, seam-side down, in pan and cook until golden brown and crisp, about 2-3 minutes per side.  Repeat. 
You could add sour cream to the tortillas. We served this with salsa on the side. 

Roasted Green Beans



We loved this, even the kids!


Ingredients:
String green beans, 1lb
3 garlic cloves, minced
salt and pepper
Olive oil


Directions:
Preheat oven to 425.  Place green beans on a 9x13 pan. Drizzle with olive oil. Sprinkle with garlic. Add salt and pepper to taste.


Bake for 15 minutes. Toss and bake for another 5-10 minutes.

Homemade Croutons



Ingredients:
Sourdough bread, cut into cubes
4 TBS butter, melted
1-2 tsp garlic salt
1-2 tsp oregano


Directions:
Preheat oven to 350
Cut sourdough bread into cubes and place in a large bowl. Melt butter. Add garlic salt and oregano to the butter. Pour over the bread cubes. Stir.
Place bread onto a cookie sheet. 
Bake for 15 minutes. Flip over bread and bake for another 15 minutes. 
These are so yummy!!!

Easter Cupcakes



Ingredients:


Box of any cupcake mix. (I chose confetti cupcake mix)
White icing
Coconut
Green food coloring
Bag of peanut M&M's


Directions:

Cook cupcakes according to box. Cool. 



While cooling place 1 cup of coconut in a Rubbermaid container. Add 5 drops of green food coloring, close and shake. 


Add green food coloring to white icing and mix. Place green icing on cupcakes. Add the green coconut. Place 3 M&M's.

Resurrection Rolls



My family loved making these. It is a great way to explain the resurrection to your children. My kids couldn't wait to see if Jesus resurrected from the roll. ;)


Ingredients:
Large marshmallows
Butter, melted
Cinnamon/sugar mixture
1 can of crescent rolls. 


Directions:


Separate the crescent rolls into triangles. The rolls represent the linen they used to wrap Jesus when he was dead. 


Dip the marshmallows in melted butter and then roll in the cinnamon/sugar mixture. The butter represents the oils they used to anoint Jesus' dead body.  The cinnamon/sugar mixture represents the spices they used in burials. 


Place the marshmallow in the center of the crescent roll. Fold and pinch the sides of the crescent roll. Place on a greased baking sheet. 


Bake rolls according to package directions. 


When cooked the marshmallow will melt and puff up the crescent roll. This demonstrates how Christ arose from the tomb and all that remained was the tomb and linen wrappings. My kids couldn't wait for me to cut into the roll. They scream with excitement "He arose!" when they saw the marshmallow was gone. So awesome.  I hope you enjoy this as much as we did.

Pico de Gallo



We had fun making this tonight. Love fresh salsa. :)


Ingredients:


4 tomatoes diced
1/2 of red onion, diced
2-3 Tbsp. cilantro
1 green pepper, diced
jalapenos to taste
salt and pepper to taste
juice of 1 lime


Directions:


Dice tomatoes, red onion, cilatntro, green pepper, and jalapenos. Add lime juice and salt and pepper. 
Serve with tortilla chips.
