Cheese-Stuffed Pork Chops (My Mom's)


Ingredients:

4 double rib pork chops
2-4oz cans chopped mushrooms
1 1/4 cup Swiss, Mozzarella, or Monterrey Jack cheese, shredded
2 Tbsp. dried parsley
1/4 tsp salt
1/2 cup Italian or plain bread crumbs
1 beaten egg

Instructions:

Cut a pocket in pork chops or get butcher knife to make a slit in the middle. Combine mushrooms, cheese parsley, salt and a dash of pepper. Stuff mixture in pockets lace shut with tooth pics. 

Dip pork chops in egg, and then dip in bread crumbs.

Place in a 9x13 casserole dish. Add 1/3 cup water to dish. Cover w/foil. Bake at 350 for 40 minutes.

Chocolate Chip Muffins

Ingredients:

Yields: 12-14 muffins

  • 2 cups all-purpose flour
  • 1/3 cup light-brown sugar, packed
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup butter, melted and cooled
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1 (11 1/2 ounce) package milk chocolate chips
  • 1/2 cup walnuts or 1/2 cup pecans, chopped 

    Directions:

    1.   Preheat oven to 400°F.
    2.  Grease twelve muffin cups.
    3.  In a large bowl, stir together flour, sugars, baking powder, and salt.
    4.  In another bowl, stir together milk, eggs, butter, and vanilla until blended.
    5.  Make a well in center of dry ingredients.
    6.  Add milk mixture and stir just to combine.
    7.  Stir in chocolate chips and nuts.
    8.  Spoon batter into prepared muffin cups.
    9.  Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin      comes out clean.
    10. Remove muffin tin to wire rack.
    11. Cool for 5 minutes.
    12.  Remove from tins to finish cooling.
    13.  Serve warm or completely cool.
    14.  These muffins freeze well.

Reuben Pizza

Our family loves to have pizza night. We love to experiment and try different types of pizza. This week it's Reuben! I will let you know how it taste.

Ingredients

  • 1 prebaked 12-inch pizza crust
  • 2/3 cup Thousand Island salad dressing
  • 8 ounces thinly sliced deli corned beef, cut into strips
  • 1 can (14 ounces) sauerkraut, rinsed and well drained
  • 2 cups (8 ounces) shredded Swiss cheese

Directions

  • Place the crust on an ungreased 14-in. pizza pan; spread with salad dressing. Layer with corned beef and sauerkraut; sprinkle with cheese. Bake at 400° for 12-15 minutes or until heated through and cheese is melted. Yield: 8 slices, 4 servings.

Seasoned Tilapia Fillets


Ingredients
  • 2 tilapia fillets (6 ounces each)
  • 1 tablespoon butter, melted
  • 1 teaspoon steak seasoning
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash garlic powder

Directions

  • Place fillets in a greased 11-in. x 7-in. baking dish. Drizzle with butter. In a small bowl, combine the remaining ingredients; sprinkle over fillets.
  • Cover and bake at 425° for 15 minutes. Uncover and bake 5-8 minutes longer or until fish flakes easily with a fork. Yield: 2 servings.
Nutrition Facts: 1 fillet equals 193 calories, 7 g fat (4 g saturated fat), 98 mg cholesterol, 589 mg sodium, 1 g carbohydrate, trace fiber, 32 g protein. Diabetic Exchanges: 5 lean meat, 1-1/2 fat.

Seasoned Tilapia Fillets Recipe

Mrs. Farmer's Creamy Baked Chicken Breasts

This recipe is good and easy to make. If you need to make a meal for someone this is a great dish. 

Ingredients:
4 chicken breasts
8 slices of swiss cheese
1 can cream of chicken
1/4 cup of dry white wine
1 cup Pepperidge Farm stuffing mix
1/4 cup butter

Instructions:
Grease a 9x13 pan. 
Cut chicken in half and place in pan. 
Place a slice of cheese over each piece of chicken.
Mix cream of chicken and wine. Pour over top of chicken and cheese.
Crush stuffing and pour over top.
Melt butter and pour over top of stuffing. 
Bake at 350 for 45-55 min. uncovered

Great with rice or creamed potatoes.

1. ANTS ON A LOG
Tell a toddler you're giving him peanut butter on celery and he may give you an uneasy look in return—but tell him you're making Ants on a Log and you're likely to pique his interest. Simply spread some peanut butter or cream cheese on a celery stick and let your child put on the raisins or chocolate chips for the ants. If you have animal crackers in the house, you could try "Tiger on a Log" or "Lion on a Log" too!
2. GRAHAM CRACKER TREATS
Moms are sure to appreciate this snack that can be made ahead of time and frozen—great for when you or the kids want a sweet treat in a jiffy! Spread your child's favorite fruity yogurt on a graham cracker square. Top this with another graham square, wrap it in plastic wrap, and freeze.

3. SWEET MAPLE DIP AND FRUIT
Are you trying to get your kids to eat more fresh fruit? This creamy Sweet Maple Fruit Dip is especially yummy with bananas, apples, and strawberries—and busy parents are sure to love how quickly the dip comes together.

Recipe for Sweet Maple Fruit Dip

Ingredients:
1/2 cup fat-free or reduced-fat vanilla yogurt
1/2 cup reduced-fat whipped topping
4 teaspoons reduced-calorie maple syrup
Sprinkle of cinnamon

Directions:
In a small bowl, combine all the ingredients. Cover and chill until you're ready to serve. Serve with fresh fruit.

4. ORANGEY ORANGE DRINK

Kids love unusual ways to eat and drink—did you know that an orange can serve as its own drink container? Roll an orange in your hands or microwave it for 15 seconds to soften it. Cut a small hole in the top of the fruit, insert a straw, and put the orange in a plastic bag. Your child can suck the juice right out of the fruit. How's that for fun and convenient?
5. PEANUT BUTTER AND TORTILLA SNACK
There are a variety of tortillas on the market today, including some great high-fiber tortillas that are soft and don't fall apart when you roll them. Choose one type or try a variety when making this versatile snack for your family.
Spread peanut butter on a tortilla (your child can do this with the back of a spoon) and then add what your little one likes. Try jam or honey spread on another tortilla, or let your child sprinkle diced apples or bananas on the peanut butter. Put the two tortillas together and use your pizza cutter to cut them into small triangles. Children will also like this snack as an easy-to-hold wrap.
