I was excited about this recipe but a little hesitant to give it to the kids. They can be picky about tuna. Well, they devoured this meal! Definitely will have again.
Ingredients:
- 2 large tuna can (in water), drained
- 2 tablespoons red onion, diced
- 1 tablespoon parsley
- 1/4-1/2 cup mayo
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 small tomatoes, sliced
- 2 avocados
- 4 slices swiss cheese
- 6 slices french bread
Directions:
- Preheat broiler.
- In a large bowl, combine the tuna, red onion, mayo, salt and black pepper. Mix well.
- Place bread on baking sheet. Toast in the broiler about 1-2 minutes each side. T
- Top each bread with tuna, then layer it with tomato and avocado.
- Place a slice of cheese on top of the tuna and place under the broiler for a few seconds, just until melted. Serve immediately.
