If you planted a garden this summer and already have a ton of squash, here is a great recipe. This would be great for summer parties. :)

Ingredients:
10-12 yellow squash / zucchini (or mix)- I had pretty big ones
1 onion
8 tablespoons butter
2 eggs beaten
2 cups shredded cheddar cheese
Directions:
1 Preheat Oven to 350°F.
2 Chop yellow squash and onion into small, uniform pieces.
3 Add the squash and onion to a LARGE saute pan and cook in the butter over medium heat until al dente (I like it not mushy)
4 Season cooked mixture to taste with salt / pepper/ garlic
Remove pan from heat
5 Beat the eggs with a fork and add it to the squash mixture.
6 Add one and a quarter cup of shredded cheese to the mixture and stir until melted and mixed
7 Pour mixture into casserole dish and top with remaining cheese.
8 Bake for 30 min or until cheese lightly browned.
