Baked Potato Soup (Allrecipes)




This is our families favorite baked potato soup. The key is use real chicken broth. It adds so much flavor.
You can place this in the crock pot if you like! But make sure your potatoes are NOT baked. 


Ingredients

  • 3 bacon strips, diced
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 3 cups chicken broth (I use real chicken broth. This makes a HUGE difference)
  • 2 large baked potatoes, peeled and cubed
  • 1 cup half-and-half cream (I substituted with 3/4 cup milk and 1/4 cup sour cream) 
  • 1/2 teaspoon hot pepper sauce
  • Shredded Cheddar cheese
  • Minced fresh parsley

  • Directions
  1. In a large saucepan, cook bacon until crisp. Drain, reserve drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream  and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.

Loved it!! I used real chicken broth and I also used sour cream/milk because I wanted it to be extra creamy. Best baked potato soup :) (I made it the stove top way, not in a crockpot. I don't think I could of waited that long. haha)

Jenn, this looks soo yummy. I think I'm going to make it tonight. Just to clarify, the potatoes should NOT be baked before adding to the soup, right? And how many servings does this recipe make?

That soup was delicious! I doubled the recipe and the only thing I'll do differently is not use quite as much pepper....the kids thought it was a little too "spicy." ;) But otherwise it was a hit!!

I just saw your post
if you are going to do it on a stovetop you will need to bake the potatoes if you were doing the crockpot do not bake potatoes just cut them up and let them cook in the crockpot

this is a stove top recipe
If you do want to use the crock pot the potatoes are NOT to be cooked.
Cook on low 4-6 hours.
